I started a second caravan with a companion with 0 trade skill. Immediately, my first caravan stopped making money and the new one was pulling in 1200/day somehow. Then all the goods in the game tanked in price. Grain for 6 gold everywhere. My caravans were pulling in money still but I couldn't trade for a profit with my main character.

Yeah they changed it, there's no longer an upkeep cost but there's also no longer a daily income either, as far as I can tell you only get money when your caravan actually makes trades. but to be honest I haven't actually followed one around to be sure.
Not gaining even 1 XP on a 5-10k trade seems rather odd. I know that the amount of XP you need to level increases, but the base value for gaining XP should be the same. I used to gain XP even on smaller profits in the 500-1k range, but not any longer. alright now try the same trade with a caravan that doesn't reduce its prices after 10 items

Never pay for upgraded caravans. All that extra 7.5k does is upgrade a few caravan guards to veteran caravan guards. It doesn't increase the caravan size or anything else. Just not worth it. The other thing, they might be attacked by looters, but once the battle commences, every bandit group in the area will pile in.
To start a caravan in Mount and Blade 2 Bannerlord, you need to have a certain level of trade skill and a sum of money to purchase a caravan. First, go to a city and find the marketplace. Then, talk to the trade master and select the “Caravan” option. Indeed, everything a caravan gets captured, you'll need to first go and meet up with your companion (he might be in a far away city as well) and then recreate a caravan for 15k. Make of that what you want. Good luck ! Damn, so we need good warriors to lead those caravans. Location and possibility of enemy raiding troops nearby have become a point to be considered when creating a caravan now. When you talk to a caravan in game, you will see that they are worth about 15k if new. After a while the amount of money they have will decline, but the amount of wares will go up. If successful, their wealth will go up, as If you assigned a companion to a town as a caravan and they get captured then released you have to pay the large price AGAIN to establish a caravan in the SAME TOWN you just established that companion before they got captured. But not before you go pick up their sorry a** from bumb f**k nowhere across the map in a settlement that is owned by the enemy.
